These exceptional cuvées are crafted with grapes from old vines that are 80 years old or older and growing on the loveliest of Beaujolais terroirs. The grapes are picked later than for our classic cuvées and are vinified using Burgundian methods, meaning they are de-stemmed to 80%. They are also vatted for an average of 20 days. After very gentle pressing, they are matured in oak barrels for 12 months. Bottling is then on the estate with no filtering.
